Owned and operated by McKibbon Hospitality, Capella on 9 was Mandara’s first restaurant consulting project. We were honored to partner with McKibbon Hospitality as the first local restaurateurs to consult for an AC Hotel.
The goal was to blend Mandara’s philosophy of service, with the standards of the hotel chain as we developed the food and beverage program and contextualized menus for the local palette. We consulted on menu planning, staff training, and catering strategy for quality, creativity, flavor and presentation while aligning with the AC’s brand guidelines.
Capella on 9 is the product of our collaboration together. Located on the rooftop of the AC Hotel, Capella on 9 offers signature cocktails, European-style tapas, small plates, and a selection of beer and wine.
